Serves 4
INGREDIENTS:
4 cups broccoli florets
1 tsp. salt
1 tsp. black pepper
2 cups black cherries, pitted
3 cups water
1 tbsp. white sugar
1 tbsp. cornstarch
METHOD:
Steam broccoli florets for 10 minutes until tender.
Meanwhile, put salt, black pepper, black cherries, water and sugar in a pan. Bring to a boil and cook for 10 minutes until water has reduced and fruit is soft.
Using a food processor, puree black cherries and water mixture. Add cornstarch and blend until smooth. Serve broccoli hot, smothered in the black cherry sauce – great as an accompaniment to pork or chicken.
